Ingredients
- 100 gram flour
- 3 eggs
- 300 ml milk
- 30 ml butter (more is better to make crepes soft and fluffy)
- pinch of salt
- 20 grams sugar
Note: This quantity would make about 5-7 medium crepes
if you are looking for vegan French crepe batter then make use of pinch of salt, few spoons of oil, about 200-250 grams of flour, 500 ml of almond milk which is sweet or use sugar/dates mixture/molasses for sweetening about 10-20 grams as per your liking.

Directions
Add all the dry ingredients in a bowl and add eggs and mix until no lumps are seen as everything is completely mixed. then add milk and butter in the batter to mix and make it thin to make crepes
now add some oil or butter on the pan and let it heat on low setting. now add the batter on pan and spread it across evenly by lifting up and rotating it clockwise or just by using spatula and let it cook for 40-50 seconds. you can turn up the heat to medium if you like faster cooking.
now insert the spatula beneath the crepe and flip it slowly to cook other side also for 30-40 seconds and then once you are satisfied by cooking on both side by seeing the crispy layer on the top and tender crepe on inside then turn off the heat and place the crepe on your serving plate carefully.
once of serving plate drizzle some maple syrups, dry fruits, fruits, different sauces etc. to make it tasty as per your liking for toppings and garnishes to enjoy with your friends and family.
Tips
make sure your pan is hot when you add the batter for crepes on it to cook the crepes properly and fully inside out, if its not sizzling while the batter is dropped then you need to turn up the heat to cook the crepe fully.
you can also add some fruit based liqueur like Grand Marnier in the preparation of batter for crepes if you like to give your crepes a good taste if you consume alcohols. it is totally optional and without it also your crepe would turn out good.
to serve the crepe fast after its being cooked and avoid it being getting cold you need to keep your toppings and drizzling sauces ready before you start cooking the batter for crepes.
you can keep them foil paper if you are making a large batch and later heat them in pre heated oven in 150 degree C for couple of minutes before serving them hot to everyone.
if you want to cook many crepes fast in one go then make use of multiple pan and stoves including induction cooktops to pour the batter on each pan and wait for 10 second then pour on other then flip the first one, doing this will help you cook crepes faster without burning them.
you can also make use of electric whisk from stand mixer, hand mixer etc. to get the batter whisked faster but it may add some air bubbles in the batter so after its down allow it to sit for 30 minutes ideal in the bowl before you make the crepes else it would give you holes in your crepes which is not pleasant to look at. resting will release all air from it and you will get perfect crepes after that.
