Risotto made with wild mushroom taste very good and is enjoyed by everyone. you will get umami like flavor from your mushroom risotto. mushroom comes with lot of essential nutrients, vitamins and minerals which are good for our body working. the amount of sodium content in mushroom is also very low which makes it a great food item to consume for people looking out for low sodium diet in their meal due to some issues.

It is very easy to make and takes about 30-45 minutes to make the dish for about 2-5 people which can be increased if you increase the quantity of raw material if the number of people to serve are more. it is one of the best recipe for mushroom lovers across the world and can be found in many renowned restaurants also. so make it and enjoy with your family and friends to have great time with them while eating mushroom risotto with green salad platter or grilled veggies and roasted chicken platter.

Delicious wild mushrooms risotto recipe


  • 250 grams rice
  • 50 grams wild mushrooms dehydrated or fresh
  • 1 shallot onion diced
  • 2-4 cloves of garlic finely minced
  • 1 liter vegetable stock
  • 50 grams butter (check my butter storage guide)
  • 40 gram cheese ( mozzarella, ricotta, pecorino, parmigiana Reggiano)
  • parsley
  • salt and pepper


To get started with preparation of risotto you need to take a pan and add the vegetable stock with mushrooms in the pan for heating. after few minutes of boiling you need to turn off the heat and take out the mushroom to keep aside in a bowl.

now in another pan you need to add butter along with shallot onions for sautéing for couple of minutes. then add minced garlic, risotto rice, mushrooms, salt and pepper, sage, parsley and stir for few minutes.

now you need to add vegetable stock kept aside in this pan to cook the risotto rice. keep the heat to moderate or low and stir for few minutes after that let it cook for about 10-14 minutes till the rice gets cooked in al dente condition.

once done, turn the heat off and add your herbs like rosemary, parsley, cheese of your choice along with the mushrooms kept aside and 1-2 spoon truffle oil if you have like it in your risotto. mix it well then check if you like the salt in it. add some seasoning also of your choice to make it more delightful to eat.

then serve hot in the bowl or plate to your guest and your self. you can ad some parsley toppings on the top to garnish it and make it look good in the bowl. you can also add some grilled and roasted mushroom with toasted cashew nuts also as garnish on the serving plate as it looks quite good besides tasting great.


you can also use the fresh wild mushrooms also for making this amazing risotto. if you plan to use them make your you clean them properly under running water and slice them to add in your risotto.

you can also add 100-200 ml of white wine while sautéing the rice before cooking to add a unique flavor in your risotto. it is totally optional and without it also the risotto turns out to be off good taste.

since the risotto rice has starch in it which absorbs the moisture from its curry so i would advice that when you plan to reheat your risotto to consume later then do it on gas stove or induction stove over medium heat and add little big stock or water in the pan to make the gravy with right thickness and not too thick. it will help you keep the risotto creamy with nice texture to eat without any issues. if using microwave to heat then also add some water in risotto container and mix it then keep for heating and also you can keep a separate bowl of water besides it in microwave so that the risotto remains moist after heating also.

if you wish to add truffle oil in the mushroom risotto but cant get from market then slice the truffles in a jar and add any neutral oil in it like olive oil etc. which do not gives to much flavor and aroma of its own and keep it for 1 day in kitchen and your truffle oil would be ready. besides truffle oil you can also garnish your mushroom risotto with sliced and grated truffle on the top also it will give a unique taste to your already delicious risotto.
