Quinoa with roasted vegetables
Ingredients
- 2-4 spoons olive oil
- 1 zucchini sliced in small chunks
- 1 medium red onions
- cooked quinoa can save you some time but if you have plenty they take raw quinoa and cook it later
- tomatoes (you can cut in small chunks or take small cherry tomatoes)
- 1-2 bell peppers of your choice from red, green peppers or yellow peppers
- 2-3 garlic cloves minced finely
Directions
You to turn on the oven to pre heat at 420 degree F and mix the minced garlic and olive oil in a bowl
now you need to take oven tray and place baking paper on it and they place the cut vegetables in a big bowl and their after drizzle over garlic and olive oil mixture over them and then sprinkle some salt, pepper and spices on the vegetables in the bowl, once mixed fully then spread the veggies on the baking paper in tray evenly.
Then place it on oven to roast for 25 minutes at 410 degree F, after every 1o minutes rotate the veggies so that they can be roasted evenly from all sides. then take it out. you can also roast the veggies in normal skillet or pan for about 20 minutes of stove top if you don’t have oven.
now you need to reheat the quinoa for about 2 minutes in oven if you already have cooked quinoa ready with you and then mix it with roasted veggies in a bowl to serve to people or enjoy yourself.
if you want to cook quinoa then take about 400-500 grams for this recipe and rinse under running water and then add in the pot with some with spices, salt, vegetable stalk if you have or you can use normal water, around 200 ml required for every 100 grams quinoa and then let it boil and cook for 15 minutes until all absorbed water is gone in quinoa. then its made and ready to eat with your favorite seasonings and sauces.
you can also drizzle some melted butter on the top of the serving bowl and add ricotta cheese or cottage cheese or pecorino cheese on the top of the bowl as they are grainy texture and would go well with this quinoa veggie bowl to have a tasty and nutritious meal with your family in morning breakfast or as evening snacks.

roasting for different veggies is different. bigger pieces take longer time so i would recommend you cut in small pieces to grill and roast fully in less time. all though you can roast all veggies for this recipes together but you can also do it separately if you know the roasting time and have lot of them to do it. below i have shared approximate roasting time when doing it at about 400 degree F or something higher in oven or microwave in convection mode.
if you are using grill then the time would be less than oven for sure by about 1/3. so you can also use it if you have for veggies roasting.

- corn cob : 30 minutes
- butternut squash : 25 minutes
- spaghetti squash : 25 minutes
- cauliflower : 20 minutes

- zucchini : 15 minutes

Tips
- To store cooked quinoa along with roasted veggies you can make use of air tight containers and keep the dish in fridge for up to 3-5 days to consume later as per your liking with different sauces and spices.
- you can take many more veggies like escarole, kale, broccoli, carrots etc. to roast them for eating with quinoa as it would give your recipe better taste.
