I'll Stop The World and Melt With You

Do you love someone enough to give them your last Rolo?

Why not take it next level and make them this easy Rolo inspired dessert for Valentine's Day? The recipe makes 2 but you can easily double it if yo have more than one love in your life or like me just love dessert.

Salted Caramel Chocolate Puddings

Caramel centre 100g dulce de leche (Carnation caramel works great. Save the extra for another use)
A table spoon of golden syrup
A hearty Pinch of sea salt flakes

Chocolate cake
60g good quality dark chocolate broken into bits.
60g unsalted butter (plus a bit more for buttering your ramekins)
60g icing sugar
1 large egg + 1 egg yolk
1 teaspoon of good quality vanilla.
25g plain flour
Pinch of salt
Cocoa to dust


1. Make the caramel centres by mixing all the ingredients together and then pop into the freezer for about 45 minutes.
2. Preheat oven to 220c and generously butter 2 ramekins (about 10cm in diameter) then dust with cocoa and tap out any excess, place ramekins on a baking tray, and pop in the fridge to chill.
3. Place the chocolate and butter in a microwave safe bowl. Melt the butter and chocolate on high for 30 second intervals, stirring in between each interval until the chocolate and butter make a smooth sauce like consistency. Be careful to not over melt the chocolate as it can burn quite easily.
4. Add the sugar to the chocolate mixture, whisk until smooth. Then wish in the egg, egg yolk and vanilla till combined.
5. Gently whisk in the flour & salt, till there are no traces of flour left.
6. Remove the ramekins from the fridge and divide the batter evenly into prepared ramekins.
7. Take the frozen caramel from the freezer. Scoop out about a tablespoon, roll into a ball and place in the centre of the batter. Poking it in until it's covered in batter. Pop back into the fridge for 20 minutes.
8. Bake for about 14 minutes. They will be done when the edges are set and the top has a firm wiggle in it.
9. Allow cakes to cool in ramekins for about 1 minute, gently run a paring knife around the edges of ramekins and carefully turn out onto the serving dish. May need a little tap to help release. over serving dishes to dislodge cakes.
10. Serve warm, then get Valentines hot!.


London Fashion Week

What a wonderful way to kick off London Fashion Week! Kooky Bakes were asked to provide an oasis of breakfast baked goods for a special event at the Oxford Street Oasis flagship store.   The event was Kicked off the #OXSTFASHION event.  The stars of the event were ceramics designer Peter Ting and Oasis Design manager Katie Sandow. They were on hand to talk to the guests about their collaboration Flutter By Oasis
We were on hand to serve up canap√© sized breakfast treats.  On the menu was our homemade chocolate, cherry & almond granola yoghurt jars, salted caramel dosants, blueberry cheesecake croissant bites, raspberry muffins, savoury cheddar & chive muffins, feta & spinach puffs and hazelnut mocha swirls.   To wash it all down we had some beautiful tea from Joes Tea Co served up in the beautifully hummingbird adorned teacups designed Peter.  Favourite tea was a toss up between St Clements & The Earl of Grey. But we love them all.

Kerbs Helraising Halloween party


This Friday the 1st of November sees the final installment of Kerb under the canopies. Kerb has thrown some amazing parties there and its an incredible space, needless to say i'm sad to see it go.  I'm not going into the politics of it.... But do come down and show them what they are missing.

The team at KERB have selected the most creative traders to present a frightenly good night to remember.  All the traders are all presenting menus that are frightfully amazing,

This has been a fun challenge as we'll be getting to do things we don't do all the time. We are approaching this with our inner Jeckle & Hyde.

Currently our menu reads like this. It's not set in a (tomb)stone yet.

Unicef support for World Food Day


We were asked to participate in the #EmptyPlate Twitter & instagram campaign.  

I was a very lucky child with food a plenty when i was growing up. So much so, things like breand and milk had to be held under lock and key so I would not consume a whole loaf of bread in a day.

But every child is not as lucky as I was and should have the food they need to grow up healthy.  Did you know that  three million children still die each year from malnutrition.   It shouldn't be like this.

This task was all about raising awareness, but I think i should do more.

Where is Wally

We've been busy in the kitchen the last couple of weeks working on various projects. In addition to our everyday baking for markets and order. It's safe to say its all a go-go (minus the sequined hot pants) here at KookyHQ. Of late we have been doing a lot of bespoke cakes for various clients.

Wheres WallyI was sat in a planning meeting with the bakery buyer at Selfridges a few months ago and she randomly drop into a non related conversation 'How Do you Feel About Wally?' I paused and my mind went into overdrive thinking what on earth is she asking me? Is there a Wally that I should have a strong opinion about? I replied with a rather middle of the road response, in my head I was thinking of Disney's Wall-e. My inability to have a poker face let me down and she caught me out for not having a clue about this Wally chap. 

After she explained him to me, I had my eureka moment  'Bingo, you mean Waldo' Explaining that in America he was called Waldo, which lead to a bit of laughter and some serious brainstorimng.  

Where's Walley (or Waldo depending on what continent you hail from) is turning 25 years old this year.  We think he's not aged a bit. To celebrate, Selfridges are doing a Where's Wally pop-up shop and commissioned us to create a limited edition cupcake to mark the occasion.

Tah Dah.. Presenting our limited edition Where's Wally Red Velvet Cupcake which is exclusively at Selfridges Oxford Street till the 25th of September.
